Golf Cupcakes

Golf Cupcakes are a colourful and fun treat! They are great to make with your little ones, and can be made for your next little golf par-tee!

Ingredients

for the cupcakes

225g unsalted butter, softened
225g caster sugar
225g self raising flour
4 eggs
1 teaspoon vanilla essence

for the icing

115g unsalted butter, softened
225g icing sugar, sieved
1 teaspoon vanilla essence

for the topping

100g shredded coconut
1-2 drops of green colouring
18 Kool Mints

Method

  1. Preheat oven to 175c, and place 18 paper baking cases in muffin tins.
  2. Combine all ingredients for the cupcakes in a large bowl and beat with an electric mixer with the whisk attachment until smooth and pale, about 2 to 4 minutes.
  3. Spoon the batter into the cases.
  4. Bake for 20 minutes.
  5. Remove tins from the oven and cool for five minutes.
  6. Then remove the cupcakes and cool on a rack.
  7. Prepare the icing by beating the butter, icing sugar, and vanilla until smooth.
  8. Pipe the icing onto each cupcake.
  9. Mix coconut with coloring until desired colour is reached.
  10. Sprinkle green coconut onto cupcake, and add one Kool Mint to each cupcake.
